Yesterday we were doing the evening dog walk around the farm, it was late and very dark, and we were halfway home when we realized we were being followed by a skunk.

Roasted Garlic Scapes
Preheat oven to 425F. Chop garlic scapes into 1 inch bits. Toss in a casserole dish with a generous amount of olive oil (I used 2T) and salt (I used ~ 1/4 teaspoon). Roast approximately ten minutes, stirring every five minutes, until the thinnest pieces start to turn brown.
Remove from oven, serve immediately and devour!
